  • 2 cloves fresh garlic (minced)
  • 1 medium onion (diced)
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cups fresh baby spinach
  • 9 sheets no-boil lasagna noodles
  • 2 cups low-sodium chicken broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt and pepper, and cook until golden brown (about 5 minutes).
  2. Stir in minced garlic and diced onion; sauté until fragrant (about 2 minutes).
  3. Mix in ricotta cheese with half of the mozzarella and Parmesan until well combined. Fold in fresh spinach.
