  • 1 lb large fresh shrimp, peeled and deveined
  • 4 corn or flour tortillas
  • 1 cup fresh pineapple, diced
  • 1/2 medium red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice (about 1 lime)
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes.
  2. In a bowl, mix olive oil, cumin, chili powder, salt, and pepper. Toss the shrimp until well-coated.
  3. In another bowl, combine diced pineapple, red onion, cilantro, lime juice, and a pinch of salt to make the salsa.
  4. Thread the shrimp onto skewers or place directly on the grill. Grill each side for about 2-3 minutes until pink and opaque.
