- 8 oz rice noodles
- 1 medium cucumber, thinly sliced
- 1 cup carrots, grated
- 1 medium red bell pepper, sliced
- ½ cup fresh mint leaves, chopped
- ½ cup fresh cilantro leaves, chopped
- ¼ cup smooth peanut butter
- 3 tbsp low-sodium soy sauce
- 2 tbsp freshly squeezed lime juice
- 1 tsp Sriracha (optional)
Instructions
- Cook the rice noodles according to package instructions until al dente. Drain and rinse under cold water.
- While the noodles cool, prepare the vegetables by slicing the cucumbers and bell pepper, and grating the carrots.
- In a bowl, whisk together peanut butter, soy sauce, lime juice, and Sriracha until smooth.
- In a large mixing bowl, combine cooled noodles with vegetables and herbs. Pour the dressing over the salad and toss well.
- Chill in the refrigerator for at least 30 minutes to let flavors meld.
- Serve chilled with extra herbs on top if desired.
