  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups broccoli florets
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey

Instructions

  1. Preheat a large skillet over medium-high heat. Add olive oil and allow it to shimmer.
  2. Season chicken breasts with salt and pepper. Sauté in the skillet for about 6 minutes on each side until golden brown and fully cooked. Remove from the skillet and let rest.
  3. In the same skillet, add onion, bell peppers, broccoli, and half of the minced garlic. Sauté for about 5 minutes until vegetables are tender-crisp.
  4. In a small bowl, whisk together soy sauce and honey. Pour over the sautéed veggies and stir to coat evenly.
  5. Slice the rested chicken into strips and add back to the skillet. Mix gently to combine flavors.
  6. Serve hot directly from the pan or transfer to plates.
