  • 1/2 cup button mushrooms, sliced
  • 1/2 cup bean sprouts, rinsed
  • 2 tablespoons low-sodium soy sauce

  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Prepare all ingredients by chopping green onions and slicing mushrooms.
  2. In a mixing bowl, whisk together the eggs with soy sauce until pale yellow.
  3. Fold in green onions, mushrooms, and bean sprouts until evenly mixed.

  5. In a small saucepan over medium heat, combine chicken broth with soy sauce. Stir in cornstarch mixture until thickened into a sauce.
