  • 1 cup gluten-free all-purpose flour
  • 1 cup rolled oats
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup coconut oil or butter, melted
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a bowl, combine chopped rhubarb with granulated sugar; let sit.
  3. In another bowl, mix gluten-free flour, oats, brown sugar, melted coconut oil (or butter), and salt until crumbly.
  4. Press two-thirds of the mixture into the prepared baking dish.
