- 8 oz firm halloumi cheese
- 1 cup cherry tomatoes, halved
- 1 medium English cucumber, diced
- 1/4 medium red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 2 tbsp extra virgin olive oil
- Salt and pepper, to taste
Instructions
- Cook the couscous: In a saucepan, bring 1 cup of water to a boil. Stir in the couscous and a pinch of salt. Remove from heat and let sit covered for 5 minutes.
- Grill the halloumi: Heat a non-stick skillet over medium heat. Slice halloumi into thick slabs. Grill each side for about 3 minutes until golden brown.
- Prepare veggies: Dice cherry tomatoes and cucumber; slice red onion; chop parsley.
- Combine ingredients: Fluff couscous with a fork in a large bowl. Add veggies, grilled halloumi, lemon juice, and olive oil. Toss gently.
- Season: Adjust seasoning with salt and pepper to taste.
- Serve: Plate the salad and garnish with extra parsley if desired.
