Ingredients

  • 2 slices sourdough or whole grain bread
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 2 pineapple slices (fresh or canned)
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat a non-stick skillet over medium heat.
  2. Butter one side of each slice of bread.
  3. On the unbuttered side of one slice, layer half the cheddar, pineapple slices, and remaining cheddar. Top with the second slice of bread (buttered side out).
  4. Grill the sandwich butter-side down for 3-4 minutes until golden brown, then flip and grill the other side for another 3-4 minutes until crispy and cheese is melted.
  5. Let it cool slightly before slicing in half and serving.
