  • 2 tsp ground paprika
  • 3 tbsp olive oil
  • 1 cup basmati rice
  • 2 cups vegetable broth
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved

Instructions

  1. Marinate the chicken by mixing olive oil, minced garlic, cumin, paprika, salt, and pepper in a bowl. Coat the chicken thoroughly and refrigerate for at least one hour.
  2. Rinse basmati rice under cold water. Cook in a pot with vegetable broth: bring to a boil, then reduce heat and simmer for 15-20 minutes until liquid is absorbed.
