- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mild cheddar cheese
- 2 cups whole milk
- 1 cup sour cream
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 2 tsp smoked paprika
- Salt to taste
- Wood chips (hickory or applewood)
Instructions
- Preheat your smoker to 225°F (107°C) or use an oven with smoked paprika.
- Cook the elbow macaroni in salted boiling water until al dente. Drain and set aside.
- In a saucepan over medium heat, melt the butter. Add flour and whisk for about two minutes until golden brown.
- Gradually stir in the milk until smooth. Lower heat and mix in the cheeses one handful at a time until melted. Stir in sour cream and smoked paprika.
- Combine the cheese sauce with the cooked pasta, stirring until well coated.
- Transfer to a cast-iron skillet, add wood chips to the smoker, and smoke for about an hour.
