  • 8 oz elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mild cheddar cheese
  • 2 cups whole milk
  • 1 cup sour cream
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 tsp smoked paprika
  • Salt to taste
  • Wood chips (hickory or applewood)

Instructions

  1. Preheat your smoker to 225°F (107°C) or use an oven with smoked paprika.
  2. Cook the elbow macaroni in salted boiling water until al dente. Drain and set aside.
  3. In a saucepan over medium heat, melt the butter. Add flour and whisk for about two minutes until golden brown.
  4. Gradually stir in the milk until smooth. Lower heat and mix in the cheeses one handful at a time until melted. Stir in sour cream and smoked paprika.
  5. Combine the cheese sauce with the cooked pasta, stirring until well coated.
  6. Transfer to a cast-iron skillet, add wood chips to the smoker, and smoke for about an hour.
