- 8 oz penne pasta
- 1 cup whole milk ricotta cheese
- 4 cups fresh spinach
- 2 cups marinara sauce
- 1 ½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat and sauté the spinach until wilted, about 2 minutes.
- In a large bowl, combine cooked pasta, sautéed spinach, ricotta cheese, half of the mozzarella, and marinara sauce. Mix well.
- Layer half of the pasta mixture in a greased baking dish. Top with half of the remaining mozzarella and some Parmesan cheese. Add the rest of the pasta mixture and finish with remaining mozzarella and Parmesan.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until bubbly and golden brown.
