  • 8 oz penne pasta
  • 1 cup whole milk ricotta cheese
  • 4 cups fresh spinach
  • 2 cups marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté the spinach until wilted, about 2 minutes.
  4. In a large bowl, combine cooked pasta, sautéed spinach, ricotta cheese, half of the mozzarella, and marinara sauce. Mix well.
  5. Layer half of the pasta mixture in a greased baking dish. Top with half of the remaining mozzarella and some Parmesan cheese. Add the rest of the pasta mixture and finish with remaining mozzarella and Parmesan.
  6. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until bubbly and golden brown.
