Instructions
- Cook the Sago Pearls: In a medium pot, bring 4 cups of water to a boil. Add 1 cup of sago pearls and reduce heat to medium-low. Stir occasionally until translucent (10–15 minutes). Drain and rinse under cold water.
- Prepare the Coconut Sauce: In another saucepan, combine 1 can of coconut milk with 1/2 cup sugar over medium heat. Stir until dissolved; add pandan leaves if using, then simmer gently.
- Blend the Mango: Peel and dice one mango into small chunks for topping. Puree the other mango until smooth in a blender.
- Combine Everything: Mix the pureed mango with the cooled sago pearls and coconut sauce until well incorporated.
