- 3–4 lbs Chuck Roast
- 1/4 cup Olive Oil
- 2 tsp Salt
- 1 tsp Pepper
- 1 tsp Garlic Powder
- 2 tbsp Fresh Rosemary or Thyme, chopped
- 1/4 cup Balsamic Vinegar
- 2 tbsp Soy Sauce
Instructions
- Marinate the chuck roast by mixing balsamic vinegar, soy sauce, olive oil, garlic powder, salt, pepper, and herbs in a bowl. Coat the roast well and refrigerate for at least 2 hours (overnight is best).
- Preheat your grill to medium-high heat.
- Remove the roast from the marinade (reserve marinade) and place it on the grill diagonally for grill marks. Cook for about 20 minutes per side until the internal temperature reaches approximately 135°F for medium-rare.
- Baste with reserved marinade every few minutes while grilling.
- Remove from grill and let rest under aluminum foil for at least 15 minutes before slicing against the grain.
