Ingredients

  • 1 cup green or brown lentils
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt & pepper to taste

Instructions

  1. Rinse the lentils under cold water. In a saucepan, combine with 3 cups water, bring to a boil, then simmer for 20-25 minutes until tender. Drain and cool.
  2. While lentils cook, prep the cucumber, cherry tomatoes, red onion (soak in cold water), and parsley.
  3. Whisk olive oil and balsamic vinegar in a bowl; season with salt and pepper.
  4. In a large bowl, combine cooled lentils, veggies, and dressing. Toss well.
  5. Chill in the fridge for at least 30 minutes before serving.
