- 1 cup green or brown lentils
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 small red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 3 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt & pepper to taste
Instructions
- Rinse the lentils under cold water. In a saucepan, combine with 3 cups water, bring to a boil, then simmer for 20-25 minutes until tender. Drain and cool.
- While lentils cook, prep the cucumber, cherry tomatoes, red onion (soak in cold water), and parsley.
- Whisk olive oil and balsamic vinegar in a bowl; season with salt and pepper.
- In a large bowl, combine cooled lentils, veggies, and dressing. Toss well.
- Chill in the fridge for at least 30 minutes before serving.
