- 2 lbs beef chuck roast, cut into 1-inch cubes
- 4 medium carrots, chopped into thick chunks
- 3 medium Yukon Gold potatoes, diced
- 2 medium onions, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium beef broth
- 2 tbsp tomato paste
- 1 tsp fresh thyme (or 1/2 tsp dried)
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Chop the beef into cubes and dice the onions and garlic.
- Set the Instant Pot to 'Sauté' mode; heat olive oil. Add onions and garlic, cooking until fragrant.
- Brown the cubed beef in batches until caramelized on all sides.
- Add carrots, potatoes, broth, tomato paste, thyme, bay leaves, salt, and pepper. Stir well.
- Seal the lid and set to 'Manual' mode on high pressure for 35 minutes. Allow for natural pressure release for 10 minutes before quick releasing any remaining pressure.
- Stir gently before serving; remove bay leaves and enjoy hot.
