  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, chopped into thick chunks
  • 3 medium Yukon Gold potatoes, diced
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop the beef into cubes and dice the onions and garlic.
  2. Set the Instant Pot to 'Sauté' mode; heat olive oil. Add onions and garlic, cooking until fragrant.
  3. Brown the cubed beef in batches until caramelized on all sides.
  4. Add carrots, potatoes, broth, tomato paste, thyme, bay leaves, salt, and pepper. Stir well.
  5. Seal the lid and set to 'Manual' mode on high pressure for 35 minutes. Allow for natural pressure release for 10 minutes before quick releasing any remaining pressure.
  6. Stir gently before serving; remove bay leaves and enjoy hot.
