  • 1 bell pepper, diced
  • 2 cups mashed potatoes
  • 1 cup cornmeal
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add a splash of olive oil and cook chopped chicken thighs until browned, about 5 minutes.
  2. Stir in diced onions, garlic, and bell peppers; sauté for 3 minutes until softened.
  3. Pour in vegetable broth along with diced tomatoes, black beans, and corn kernels. Simmer for about 10 minutes.
  4. In a mixing bowl, combine mashed potatoes, cornmeal, cumin, chili powder, salt, and pepper until blended; form small dumpling balls.
  5. Drop dumpling balls into the simmering soup. Cover and steam for about 15 minutes until cooked through.
