  • 4 medium ripe tomatoes (about 500g), sliced
  • 1/4 cup extra virgin olive oil (60ml)
  • 2 tbsp balsamic vinegar (30ml)
  • 3 garlic cloves, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh basil leaves, torn

Instructions

  1. Wash and dry the tomatoes, then slice into quarters or halves.
  2. In a large bowl, mix olive oil, balsamic vinegar, minced garlic, salt, and pepper until well combined.
  3. Add the sliced tomatoes to the bowl and gently toss to coat them in the marinade.
