Ingredients

  • 1 cup green or brown lentils
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water. In a pot, combine with 3 cups of water and bring to a boil. Reduce heat and simmer uncovered for about 20-25 minutes until tender. Drain and cool.
  2. While the lentils cook, chop the cucumber, halved cherry tomatoes, and red onion into bite-sized pieces.
  3. In a large bowl, mix cooled lentils with chopped vegetables and herbs.
  4. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper; toss gently to combine.
  5. Cover the salad and refrigerate for at least one hour before serving.
