  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1 cup bell peppers (mixed colors), diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, and red onion; also chop the fresh basil.
  3. In a small bowl or jar, whisk together olive oil, balsamic vinegar, Dijon mustard, garlic powder, salt, and pepper until well combined.
  4. In a large bowl, combine the cooled pasta with chopped vegetables and basil. Pour the dressing over the salad and toss gently to combine.
  5. Cover and refrigerate for at least one hour before serving to allow flavors to meld.
