- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced

- 1 cup bell peppers (mixed colors), diced

- 1/4 cup extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
- While the pasta cools, chop the cherry tomatoes, cucumber, bell peppers, and red onion; also chop the fresh basil.
- In a small bowl or jar, whisk together olive oil, balsamic vinegar, Dijon mustard, garlic powder, salt, and pepper until well combined.
- In a large bowl, combine the cooled pasta with chopped vegetables and basil. Pour the dressing over the salad and toss gently to combine.
