Instructions
- In a large pot over medium heat, heat olive oil. Sauté onion and garlic until the onion is translucent (about 5 minutes).
- Add chopped carrots and stir for 2 minutes to coat them in oil.
- Pour in vegetable broth, bring to a boil, then simmer for about 20 minutes until carrots are tender.
- Blend the soup using an immersion blender or regular blender until smooth.
- Stir in coconut milk and season with salt and pepper to taste.
- Serve warm, garnished with additional coconut milk or fresh herbs if desired.
