Ingredients

  • 4 medium carrots, peeled and chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium heat, heat olive oil. Sauté onion and garlic until the onion is translucent (about 5 minutes).
  2. Add chopped carrots and stir for 2 minutes to coat them in oil.
  3. Pour in vegetable broth, bring to a boil, then simmer for about 20 minutes until carrots are tender.
  4. Blend the soup using an immersion blender or regular blender until smooth.
  5. Stir in coconut milk and season with salt and pepper to taste.
  6. Serve warm, garnished with additional coconut milk or fresh herbs if desired.
