  • 1 can (14.5 oz) diced tomatoes (no salt added)
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, warm olive oil. Sauté onions until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  2. Stir in chopped carrots and celery; cook for about 5 minutes until slightly softened.
  3. Add canned diced tomatoes with their juice and pour in vegetable broth. Bring to a gentle boil.
  4. Stir in dried herbs (basil, oregano, thyme), then season with salt and pepper. Simmer on low heat for about 20 minutes.
  5. Add zucchini slices along with spinach or kale; cook for an additional 5 minutes until tender yet vibrant.
