- 1 tsp paprika
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp olive oil (divided)
- 2 tbsp low-sodium soy sauce
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Peel and cube sweet potatoes; toss with 1 tbsp olive oil, salt, and pepper in the baking dish.
- Bake sweet potatoes for about 20 minutes until fork-tender.
- In a skillet over medium heat, add remaining olive oil, sauté onions and garlic for 3 minutes until fragrant. Add bell peppers and sauté for another minute.
- Add ground beef to the skillet; season with cumin, paprika, salt, and pepper. Cook until browned for about 5-7 minutes.
- Combine roasted sweet potatoes with the beef mixture in a large bowl. Stir in soy sauce.
- Return everything to the baking dish and bake for an additional 15 minutes until bubbly.
