  • 1 ham hock or 2 cups diced ham
  • 1 cup dried navy or great northern beans (soaked overnight)
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 bay leaves

Instructions

  1. Soak the beans overnight in cold water; drain before using.
  2. In a large pot over medium heat, add a splash of olive oil and sauté onions, carrots, celery, and garlic until softened (about 5 minutes).
  3. Stir in the ham and soaked beans. Cover with chicken broth by about an inch and add bay leaves.
  4. Bring to a boil; then reduce heat to low. Cover and simmer for at least 1 hour, stirring occasionally.
  5. Taste and adjust seasoning with salt and pepper; remove bay leaves before serving.
