- 20–25 large pasta shells
- 1 cup fresh ricotta cheese
- 2 cups fresh spinach, washed
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 cups marinara sauce
- 1 tsp salt (to taste)
- 1/2 tsp black pepper (to taste)
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Boil salted water in a large pot and cook the pasta shells until al dente. Drain carefully.
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant. Add spinach and cook until wilted. Remove from heat.
- In a bowl, mix the sautéed spinach with ricotta, half of the Parmesan, salt, and pepper.
- Stuff each shell with the mixture and place them in a greased baking dish lined with marinara sauce.
- Pour remaining marinara sauce over the shells and sprinkle with the rest of the Parmesan cheese.
- Cover with foil and bake for 25 minutes, then remove foil and broil for an additional 5 minutes until golden brown.
- Serve hot, garnished with basil if desired.
