  • 4 slices thick white or whole wheat bread
  • 2 large eggs
  • 1/2 cup whole milk (or almond/soy milk)
  • 1/4 cup finely chopped onion
  • 1/2 cup diced ripe tomato (seeds removed)
  • 12 finely chopped green chilies
  • 1/4 cup coarsely chopped cilantro
  • 1/2 tsp turmeric
  • 1/2 tsp garam masala
  • Salt & pepper to taste
  • Oil or butter for cooking

Instructions

  1. In a bowl, whisk together the eggs, milk, turmeric, garam masala, salt, and pepper until smooth.
  2. Heat oil in a non-stick skillet over medium heat. Sauté onions until translucent, then add tomatoes and green chilies until softened.
  3. Combine sautéed vegetables with the egg mixture and stir in cilantro.
  4. Dip each slice of bread into the mixture until coated but not soggy.
  5. Cook bread slices in the skillet for about 3 minutes on each side until golden brown.
  6. Serve hot with additional cilantro or avocado slices.
