  • 4 cups mixed greens (spinach and arugula)
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1 cucumber, thinly sliced
  • 2 green onions, chopped
  • 2 tbsp toasted sesame seeds
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp unseasoned rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup

Instructions

  1. Rinse mixed greens under cold water and dry thoroughly.
  2. Slice red bell pepper, shred carrots, and slice cucumber. Combine all veggies in a large bowl.
  3. Add mixed greens and green onions to the veggie mix; toss gently.
  4. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and honey/maple syrup.
  5. Drizzle dressing over the salad just before serving; toss gently to coat.
  6. Sprinkle toasted sesame seeds on top and serve immediately.
