Ingredients

  • 14 oz firm tofu
  • 1 tsp turmeric
  • 2 tbsp nutritional yeast
  • 1 cup bell peppers, chopped
  • 1 cup fresh spinach
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Press the tofu for about 15 minutes to remove excess water.
  2. Heat olive oil in a non-stick skillet over medium heat. Sauté onions and bell peppers for about 5 minutes until soft.
  3. Crumble the pressed tofu into the skillet, folding it into the sautéed veggies gently.
  4. Add turmeric, nutritional yeast, salt, and pepper; stir well to combine.
  5. Incorporate spinach and cook for another few minutes until wilted.
  6. Serve hot with toast or in a burrito.
