- 14 oz firm tofu
- 1 tsp turmeric
- 2 tbsp nutritional yeast
- 1 cup bell peppers, chopped
- 1 cup fresh spinach
- 1 small onion, chopped
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Press the tofu for about 15 minutes to remove excess water.
- Heat olive oil in a non-stick skillet over medium heat. Sauté onions and bell peppers for about 5 minutes until soft.
- Crumble the pressed tofu into the skillet, folding it into the sautéed veggies gently.
- Add turmeric, nutritional yeast, salt, and pepper; stir well to combine.
- Incorporate spinach and cook for another few minutes until wilted.
- Serve hot with toast or in a burrito.
