Ingredients
- 3 medium zucchinis (sliced lengthwise)
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese (divided)
- 2 cups marinara sauce
- ½ cup grated Parmesan cheese
- ¼ cup fresh basil (chopped)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Slice zucchini into thin strips and lay on paper towels with a sprinkle of salt to draw out moisture.
- In a bowl, mix ricotta, half of the mozzarella, Parmesan, basil, salt, and pepper until well combined.
- In an oven-safe dish, layer marinara sauce, zucchini slices, and half of the cheese mixture. Repeat until all ingredients are used.
- Top with remaining marinara sauce and mozzarella. Cover with foil and bake for 30 minutes.
- Remove foil and bake uncovered for an additional 15-20 minutes until bubbly and golden brown.
