  • 3 medium zucchinis (sliced lengthwise)
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese (divided)
  • 2 cups marinara sauce
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Slice zucchini into thin strips and lay on paper towels with a sprinkle of salt to draw out moisture.
  2. In a bowl, mix ricotta, half of the mozzarella, Parmesan, basil, salt, and pepper until well combined.
  3. In an oven-safe dish, layer marinara sauce, zucchini slices, and half of the cheese mixture. Repeat until all ingredients are used.
  4. Top with remaining marinara sauce and mozzarella. Cover with foil and bake for 30 minutes.
  5. Remove foil and bake uncovered for an additional 15-20 minutes until bubbly and golden brown.
  6. Let cool for 10 minutes before slicing. Garnish with extra basil if desired.
