Instructions
- In a large pot, cover goat meat with water, season with salt and one seasoning cube. Boil until tender, about 1 hour.
- In another pot, sauté onions in oil over medium heat until golden brown.
- Add diced tomatoes to the onions and cook until soft, about 10 minutes.
- Stir in ground egusi seeds, adding water or broth gradually to achieve your desired consistency.
- Incorporate the cooked goat meat into the egusi mixture and simmer for an additional 15 minutes.
- Add fresh spinach leaves just before serving and allow them to wilt.
