  • 1 cup long-grain white rice
  • 1 cup tomato sauce
  • 1 cup vegetable broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pan over medium heat, add a splash of olive oil and sauté the onion and garlic until translucent (about 3 minutes).
  3. Add the diced bell pepper and cook for another 2 minutes.
  4. Stir in the tomato sauce and vegetable broth; mix well.
  5. Add the rinsed rice, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all liquid is absorbed.
  6. Fluff the rice with a fork and stir in chopped cilantro before serving.
