- 1 cup shredded Monterey Jack cheese

- 1/4 cup chopped cilantro
- 1/2 cup sour cream (for topping)
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
- Slice zucchinis lengthwise into thin strips (about 1/8 inch thick).
- In a mixing bowl, combine cream cheese, cheddar cheese, Monterey Jack cheese, black beans, and cilantro until well blended.
- Place about two tablespoons of the filling at one end of each zucchini slice and roll tightly.
- Arrange the roll-ups seam-side down in the baking dish and pour enchilada sauce over them.
