  • 150g fresh raspberries
  • 300ml heavy cream
  • 75g granulated sugar
  • 3 gelatin sheets
  • 1 tsp vanilla extract

Instructions

  1. Soak gelatin sheets in cold water according to package instructions.
  2. Melt dark chocolate in a heatproof bowl over simmering water until smooth.
  3. Whip heavy cream in a separate bowl until soft peaks form; gently fold in sugar and vanilla.
  4. Squeeze excess water from gelatin and mix into the warm melted chocolate until fully dissolved.
  5. Gradually fold in whipped cream until combined, then gently fold half of the raspberries.
  6. Pour into serving glasses or molds and refrigerate for at least four hours or until set.
