  • 2 large eggs
  • 1/4 cup granulated sugar
  • 1 cup heavy cream

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water until smooth; let cool slightly.
  2. Separate the egg yolks and whites; whisk yolks with half the sugar until pale, then stir in melted chocolate.
  3. Beat egg whites with remaining sugar until stiff peaks form.
  4. Gently fold one-third of the egg whites into the chocolate mixture, then fold in the remaining egg whites.
  5. Whip heavy cream until soft peaks form and fold into the chocolate mixture.
  6. Spoon mousse into serving dishes and refrigerate for at least one hour to set.
