  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 large eggs
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a large bowl, mix melted butter, granulated sugar, brown sugar, cocoa powder, eggs, food coloring, and vanilla until smooth. Stir in flour, baking powder, and salt until just combined.
  3. In another bowl, beat cream cheese with sugar and one egg until creamy; add vanilla extract.
  4. Pour half of the brownie batter into the pan. Add dollops of cheesecake mixture on top and pour remaining brownie batter over it. Swirl gently with a knife.
  5. Bake for 30-35 minutes or until a toothpick inserted comes out mostly clean. Allow cooling before cutting into squares.
