  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter (melted)
  • 1/4 cup granulated sugar
  • 16 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 2 large eggs
  • 3 cups apples (thinly sliced, such as Granny Smith or Honeycrisp)
  • 1 tsp ground cinnamon
  • 1/4 cup brown sugar
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat oven to 325°F (163°C) and grease a springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar; press into the bottom of the springform pan.
  3. Beat cream cheese until smooth; gradually add sour cream and eggs until well combined.
  4. Sauté sliced apples with brown sugar and cinnamon in a skillet over medium heat until slightly softened.
  5. Layer half of the cheesecake mixture over the crust; spread cooked apples on top, then pour remaining cheesecake mixture.
  6. Combine oats, flour, brown sugar, and cinnamon for the topping; sprinkle over assembled cheesecake.
  7. Bake for about 60 minutes until set but slightly jiggly in the center. Cool completely before serving.
