  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz elbow macaroni
  • 1 cup buffalo sauce
  • 2 cups shredded sharp cheddar cheese
  • 1 cup whole milk
  • 1 cup panko breadcrumbs
  • 4 tbsp butter
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Season chicken with salt and pepper, then cook in a skillet over medium heat until no longer pink (6-7 minutes per side). Shred cooked chicken.
  2. Boil salted water in a pot. Add elbow macaroni and cook according to package instructions until al dente. Drain.
  3. In a saucepan, melt butter over medium heat. Whisk in flour for about 2 minutes. Gradually add milk while whisking until smooth. Stir in buffalo sauce and cheddar cheese until melted.
  4. In a mixing bowl, combine shredded chicken, macaroni, and cheese sauce. Mix well.
  5. Transfer to a greased baking dish, top with panko breadcrumbs, and bake for 25-30 minutes until golden brown.
