  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil leaves
  • 8 oz fresh mozzarella cheese, sliced
  • 1 lb red potatoes, diced into bite-sized pieces
  • 2 tbsp balsamic glaze
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Season the chicken breasts with salt and pepper and place them in the baking dish.
  3. Add diced red potatoes around the chicken.
  4. Scatter halved cherry tomatoes and torn basil leaves over the chicken. Drizzle everything with olive oil.
  5. Top each chicken breast with slices of mozzarella cheese.
  6. Roast in the oven for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
