  • 4 large portobello mushrooms
  • 1 cup fresh mozzarella balls, cubed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, torn
  • 2 tbsp balsamic glaze
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare a baking dish with nonstick cooking spray.
  2. Clean the portobello caps with a damp paper towel, removing stems and gills to create space for stuffing.
  3. In a bowl, mix mozzarella, cherry tomatoes, basil, salt, and pepper.
  4. Generously stuff each mushroom cap with the mixture and drizzle olive oil over them.
  5. Bake in the preheated oven for about 20 minutes until bubbling and golden brown.
