  • 1 cup sharp cheddar cheese, freshly grated
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 3 egg yolks
  • Salt and pepper to taste

Instructions

  1. Prepare the potatoes: Peel and cut the Yukon Gold potatoes into even chunks. Boil in salted water until fork-tender (15-20 minutes). Drain.
  2. Mash: Return the potatoes to the pot, add butter and heavy cream. Mash until smooth and creamy.
  3. Mix: Stir in cheddar cheese, egg yolks, salt, and pepper until well combined.
  4. Pipe: Preheat oven to 425°F (220°C). Transfer mixture to a piping bag and pipe rosettes onto a parchment-lined baking sheet.
  5. Bake: Bake for about 20 minutes or until golden brown.
