  • 1 medium spaghetti squash
  • 1 pound Italian sausage (mild or spicy)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the spaghetti squash lengthwise and scoop out seeds. Drizzle with olive oil, then season with salt and pepper.
  3. Place the squash cut-side down on the baking sheet and bake for 30-40 minutes until tender.
  4. While the squash is baking, heat a skillet over medium heat. Cook the Italian sausage until browned (about 7-10 minutes), adding minced garlic in the last minute.
  5. Remove from heat, stir in half of the shredded mozzarella cheese until melted.
  6. Fluff the cooked strands of spaghetti squash with a fork, fill each half with the sausage mixture, top with remaining cheese, and bake again for 10-15 minutes until bubbly.
