  • 34 lb boneless chuck roast
  • 1 cup cranberry sauce (homemade or store-bought)
  • ½ cup balsamic vinegar
  • 2 tbsp fresh thyme leaves
  • 4 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Generously season the beef roast with salt and pepper.
  3. In a hot skillet with a splash of oil, sear the roast on all sides until browned (about 3-4 minutes each side).
  4. In a bowl, combine cranberry sauce, balsamic vinegar, minced garlic, and thyme until well blended.
  5. Place the seared roast in a roasting pan and pour half of the glaze over it.
  6. Cover with foil and roast for about 2 hours until fork-tender. In the last 30 minutes, uncover and drizzle with remaining glaze for caramelization.
  7. Let rest before slicing, serving with sauce drizzled on top alongside mashed potatoes or roasted vegetables.
