  • 2 cups fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions in salted boiling water until they float (about 3-4 minutes). Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant (about 1 minute).
  3. Add spinach and cherry tomatoes; cook until spinach wilts and tomatoes soften (about 3-5 minutes).
  4. Pour in heavy cream, stirring continuously. Add salt, pepper, and most of the Parmesan cheese. Simmer gently.
  5. Fold in cooked tortellini until well coated in sauce.
