Instructions
- Boil the eggs: Place the eggs in cold water, bring to a boil, cover, and let sit for 12 minutes. Transfer to an ice bath.
- Prepare the shrimp: Season shrimp with salt and pepper. Dredge in flour, dip in beaten eggs, and coat with panko.
- Fry the shrimp: Heat oil to 350°F in a pan. Fry shrimp until golden brown on both sides (about 2 minutes per side). Drain on paper towels.
- Make the filling: Peel cooled eggs, halve lengthwise, and scoop out yolks into a bowl. Mix yolks with mayonnaise, mustard, lemon juice, paprika, salt, and pepper until smooth.
