- 2 lbs waxy potatoes (Yukon Gold or red)
- 6 slices thick-cut bacon
- 1 medium yellow onion, finely chopped
- 1/3 cup apple cider vinegar
- 2 tbsp whole-grain Dijon mustard
- Salt and pepper to taste
- 1/2 cup fresh parsley, chopped
Instructions
- Wash and peel the potatoes. Cut them into bite-sized cubes and place in a pot of cold water. Bring to a boil and cook for 10-15 minutes until tender but firm.
- While the potatoes are cooking, fry the bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble.
- In the same skillet, sauté the chopped onion in about 2 tbsp of bacon drippings until translucent (about 5 minutes).
- Combine drained potatoes with crumbled bacon and sautéed onions in a large bowl. Drizzle with apple cider vinegar and Dijon mustard; season with salt and pepper. Mix gently.
- Add chopped parsley and toss again. Serve warm or chill for an hour before serving.
