  • 3 ripe bananas (mashed)
  • 1/3 cup coconut oil (melted)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 cup chopped walnuts or pecans (toasted)
  • 1/2 cup shredded coconut (sweetened or unsweetened)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the ripe bananas until smooth.
  3. In another bowl, whisk together melted coconut oil and sugar. Add eggs and mashed bananas; mix well.
  4. In a separate bowl, combine flour and baking soda. Gradually stir into wet ingredients until just combined.
  5. Fold in shredded coconut and nuts gently.
  6. Pour batter into the prepared pan and bake for 60 minutes or until a toothpick inserted comes out clean. Allow to cool before slicing.
