- 2 chipotle peppers in adobo sauce, minced

- 1 cup white or brown rice
- 1 cup bell peppers, sliced (mixed colors)
- 1/4 cup fresh cilantro, chopped
Instructions
- Marinate the chicken by whisking together honey, minced chipotle peppers, lime juice, and brown sugar in a bowl. Coat the chicken breasts in the marinade and refrigerate for at least 30 minutes.
