  • 3 pounds boneless short ribs
  • 2 tablespoons extra virgin olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 cup dry red wine
  • 28 ounces crushed tomatoes (1 can)
  • 2 cups low-sodium beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode. Heat olive oil and add diced onion; sauté until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  2. Season short ribs with salt and pepper. Increase heat to high and brown the ribs on all sides (about 3 minutes per side).
  3. Pour in red wine to deglaze the pot, scraping up browned bits, and simmer for 2 minutes.
  4. Add crushed tomatoes, beef broth, oregano, and basil; stir well before adding the short ribs back into the mixture.
  5. Secure the lid and cook on high pressure for 35 minutes. Allow natural pressure release.
  6. Remove ribs, shred with forks, and return to sauce. Serve over pasta or polenta.
