Ingredients
- 4 medium zucchinis
- 1 lb ground beef or turkey
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup marinara sauce
- 15 oz ricotta cheese
- 1 cup shredded mozzarella cheese
- 2 tsp dried Italian herbs (oregano and basil)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Halve the zucchinis lengthwise and scoop out the centers to create boats.
- In a skillet, cook the ground meat with onion and garlic over medium heat until browned. Drain excess fat.
- Stir in marinara sauce and reserved zucchini flesh; simmer for about 5 minutes.
- In a bowl, combine ricotta cheese, herbs, salt, and pepper.
- Stuff each zucchini half with the meat mixture followed by dollops of ricotta. Top with mozzarella cheese.
