- 4 thick slices brioche or sourdough bread
- 2 large eggs
- 1/2 cup whole milk (or dairy-free alternative)
- 1/4 cup finely chopped onion
- 1/4 cup diced tomatoes
- 1–2 green chilies, finely chopped
- 2 tbsp chopped fresh cilantro
- 1/2 tsp turmeric powder
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- Salt and pepper to taste
- 2 tbsp oil for frying
Instructions
- In a large bowl, whisk together eggs and milk until blended. Add onions, tomatoes, chilies, cilantro, turmeric, cumin, coriander, salt, and pepper; mix well.
- Heat oil in a non-stick skillet over medium heat.
- Dip each slice of bread into the egg mixture for about 10 seconds per side to soak.
- Fry the soaked bread slices until golden brown and crispy, approximately 3–4 minutes per side.
- Transfer cooked toast to a paper towel-lined plate to absorb excess oil.
- Serve hot with chutney or sauce for dipping.
