  • 4 thick slices brioche or sourdough bread
  • 2 large eggs
  • 1/2 cup whole milk (or dairy-free alternative)
  • 1/4 cup finely chopped onion
  • 1/4 cup diced tomatoes
  • 12 green chilies, finely chopped
  • 2 tbsp chopped fresh cilantro
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • Salt and pepper to taste
  • 2 tbsp oil for frying

Instructions

  1. In a large bowl, whisk together eggs and milk until blended. Add onions, tomatoes, chilies, cilantro, turmeric, cumin, coriander, salt, and pepper; mix well.
  2. Heat oil in a non-stick skillet over medium heat.
  3. Dip each slice of bread into the egg mixture for about 10 seconds per side to soak.
  4. Fry the soaked bread slices until golden brown and crispy, approximately 3–4 minutes per side.
  5. Transfer cooked toast to a paper towel-lined plate to absorb excess oil.
  6. Serve hot with chutney or sauce for dipping.
