  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 3 garlic cloves, minced
  • 1/2 onion, finely chopped
  • 1 cup long-grain white or brown rice
  • 2 cups tomato sauce
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, onion, oregano, salt, and pepper until just mixed.
  2. Shape the mixture into small meatballs (about 1 inch in diameter) and place on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat. Brown half the meatballs for about 5-7 minutes; remove and repeat with remaining meatballs.
  4. Pour tomato sauce into the skillet; bring to a simmer. Return all meatballs to the sauce, cover, and cook for 15-20 minutes until cooked through.
  5. While meatballs simmer, cook rice according to package instructions.
  6. Serve rice topped with meatballs and sauce.
